Lee started working in kitchens at 14 and was chef saucier at a hotel by 19. He immigrated to Canada in 1978, working up to executive chef at a number of restaurants before opening his own in 1987. After a three-year spell in Singapore, Lee returned to Canada in 2000 to open his own acclaimed restaurants.
